Fry mushrooms until starting to brown in oil, add onion, fry until yellow. Add soy sauce and minced ginger. Meantime slice pepper and snow peas and put mung beans sprouts if using in boiling water and strain. Add peppers, snow peas and water chesnuts to mushroom / onion mixture gentle stir fry. Turn off heat and add mung bean, serve immediately.
