Pesach Heaven!

1. Sautee onions, celery and nuts in oil until onions are tender but not brown.
2. Add matzot to above and stir to combine.
3. Then add egg and chicken soup.
4. Spread above mixture in large (at least 9x13) GREASED baking pan.
5. On top of stuffing, put chicken quarters (or 4 broiler halves), brush with glaze (jam or jelly works as well, or even margarine will do in a pinch).
6. Bake at 350° for approximately 1 1/4 hours (very large pieces of chicken will take 1 1/2 hours).
7. Mix applesauce and cranberry sauce. Serve on the side
