Light and delicious salad. Great with any meal or BBQ. Double or triple the recipe for a pot luck.
Clean corn and either grill or boil it for 5-10 min or until desired tenderness. Let cool. Remove cooled corn from cob and put in large bowl. Cut cherry tomatoes in half add to bowl, add diced avocado and red onion.
In a separate bowl mix vinegar, honey, garlic powder, onion powder salt and pepper. Whisk in oil a little at a time till all incorporated. Place in lidded jar. Before serving, shake dressing well, add to salad till desired taste, mix salad carefully. Serve immediately.
Store extra dressing in refrigerator.
