This is a nice light soup that you can enhance by adding a little grated cheddar cheese or crumbled cotija cheese as a garnish. You can also add thin julienne cut strips of fried corn tortilla as well as a dollop of sour cream. Of course it is lighter if you leave out these items and it is just as good.
Pour the chicken broth in a large pot. Placed the chicken breasts in the broth and simmer for 15-20 minutes. Remove the breasts from the broth and shred in a bowl. Set aside. Reserve broth.
Heat oil over medium heat in another pot. Add garlic and 1 cup of the green onions. Saute about 2 minutes then add the diced tomatoes. Saute for another minute until soft.
Using a sieve, pour hot chicken broth into pot. Add cumin and chili powder and bring to a boil. Cover and simmer on low for about 15 minutes. Add the shredded chicken about halfway through.
Remove from heat and ladle into bowls. At this point you can garnish with the rest of the green onions, cilantro, a wedge of lime, cotija or cheddar cheese and tortilla strips as desired. Season with salt and pepper and enjoy!
