Suggest a better descriptionNuma panela com água a ferver colocar as postas de bacalhau durante 2 minutos. O objectivo não é cozer muito o bacalhau, queremo-lo quase cru, o objectivo é facilitar a remoção da pele e espinhas. Passado os 2 minutos tirar o bacalhau da água e deixar arrefecer. Depois, retira-se a pele, as espinhas e desfia-se o bacalhau.
Numa panela com água e sal colocar as batatas a cozer durante 15 minutos.
Num tacho, cobrir o fundo com azeite, juntar a cebola cortada às rodelas finas, os dentes de alho picados, o bacalhau desfiado, as especiarias e o louro.
Refogar durante o tempo que as batatas demoram a cozer. A cebola deverá ficar mole.
Provar o bacalhau, deverá ter um sabor um pouco forte a pimenta. Se tiver insonso colocar um pouco de sal. Não há nada pior que bacalhau insonso.
Quando as batatas tiverem bem cozidas, escorrer a água. Depois esmagar bem com um esmagador, adicionar as natas, o bechamel e a raspa de lima.
Quando estiver bem cremoso misturar o refogado do bacalhau e envolver bem. Provar e rectificar os temperos, se necessário.
Colocar numa travessa de ir ao forno e polvilhar com queijo ralado.
Ligar só a resistência de cima do forno a 220ºC. Quando o queijo estiver derretido e douradinho está pronto.
Servir com uma saladinha de alface, tomate-cereja e manjericão.
