Oven to 375
Season chicken w/. salt, pepper.
Lightly flour the chicken.
In high sided fry pan, add EVOO and when hot brown chicken on all sides. Remove
Add carrot , garlic, shallot, mushrooms, tomato paste and pearl onions. cook 5 min. deglaze w/. wine.
Add chicken, brandy, chicken stock, bay leaf, thyme. bring to boil.
Cover, bake 45 min.
sprinkle w/ parsley when serving.
