You can use black sea bass, cod, halibut. Serve with lemon for garnish.
1. Preheat overn to 350. Grease a small baking dish with butter or a little olive oil. Rinse off the fish with cold water, pat dry.
2. Place fish in the baking dish.
3. Melt the butter. Crush the Ritz crackers and place in a bowl; they shold look like coarse breadcrumbs. Mix the melted butter with the breadcrumbs. Pack the crumb mixture over the top and sides of the fish.
4. Place in the oven and bake for 20 minutes, or until th fish flakes easily.
5. Serve with lemon.
