Very light and flavorful!
1. Arrange fillets in a lightly greased 13x9x2 pan. Sprinkle with onion, salt, and pepper.
2. Combine apple juice, white wine, and lemon juice; pour over fish. Cover and bake at 350?F for 25-30 minutes or until fish flakes easily.
3. Transfer fish to serving platter. Strain and reserve 2/3 cups liquid.
4. Melt butter over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add whipping cream and reserved 2/3 cups liquid. Cook over medium heat stirring constantly, til mix is thickened and bubbly; pour over fish. Sprinkle with Parmesan cheese and parsley.
