Cook macaroni according to instructions, minus 2 minutes. Cook with 1 tsp salt. Drain and run cold water over to cool.
Preheat oven to 375. Place 2.5-3 quart casserole dish in oven for a few min to heat up. Remove and melt butter in dish.
Combine all milks, eggs, salt, pepper, paprika, sweetner,and sour cream in separate bowl. Whisk to mix well.
Pour macaroni into casserole dish. Next add 1/2 the cheddar, 1/2 the colby jack and all the Velveeta to macaroni and pour milk mixture in. Pack ingredients into dish well and top with remaining cheese.
Bake for 20-25 min until cheese is melted and bubbly. Then place under broiler a few min until cheese is browned on top.
