Easy, low-calorie weeknight meal with wonderful unique flavours combinations.
- Preheat oven to 200C (Fan)
- Pierce sweet potatoes 4-5 times each with a fork and place on baking tray lined with tin foil
- Wash grapes and toss in a bowl with olive oil and a generous amount of salt and fresh cracked pepper, then set aside
- Bake the potatoes for 35 minutes, then remove from the oven and dump the grapes onto the baking tray
- Bake for 10 more minutes until the grapes are soft and just about to burst, and potatoes are tender throughout
- Allow potatoes to cool a bit, then fill with crumbled goat cheese and top with the roasted grapes
