1) Halve tomatoes crosswise in half; scoop out the seeds and season with salt and pepper.
2) Brown bacon in a skillet. Add the white parts of the scallions and the garlic cloves; cook 1 minute.
3) Stir in Panko and olive oil, parmesan and parsley. Season with salt and pepper; stir in Pepper Jack cheese.
4) Stuff into the tomatoes; bake at 400 degrees until golden, about 20 minutes. Top with scallion greens.
