excellent side dish
1. preheat the oven to 450 degrees. spray a large rimmed baking sheet with nonstick spray.
2. stir the vinegar, oil, mustard, salt and pepper together in a large bowl. add the bell peppers, fennel, zucchini and onion, toss well.
3. spread the vegetables evenly in the pan. roast stirring once, until the vegetables are browned and tender, 25-30 minutes.
