Allow 1.5 hour for puffs, 30 minutes for filling and 30 minutes for icing.
Puffs
1. Heat to boiling 1 cup water and .5 cup butter
2. Sir in 1 cup shifted flour stirring constantly until mixture forms ball. Cook until it no longer sticks to pot.
3. Remove from heat. Let cool. Break 4 eggs into a bowl and lightly wisk. Add 2 oz egg mixture to flour mixture and mix with electric beater with paddle. Check flour consistancy and texture. Add egg mixture 2 oz at a time until dough is smooth and velvety. Test dough consistancy with the string test (place dough between thumb & forefinger...sting should form).
4. Drop flour onto Teflon (silicon) baking sheet. Form base drop of 2-3 inches (about a tablespoon) for 9 puffs evenly spaced. Add cap drop of 1-2 inches (about a teaspoon) on top of the base drops.
5. Bake at 425F fir 20 minutes; reduce heat to 350F for 30 minutes; Release steam by poking a small hole with toothpick in the top of each puff. Let cool in oven with door open.
6. When puffs are cool, slice off caps, and clear interiors.
Filling
1. In a sauce pan, add pudding mix and 2 cups of milk.
2. Heat to full boil stirring constantly.
3. Remove from heat. Cover pudding mixture on top with plastic wrap. Allow to completely cool to room temp.
4. In bowl, beat whipping cream with electric beater. Add sugar and vanilla to taste. Whipped cream is finished when cream has soft peaks.
5. Fold in whipped cream in cooled pudding mixture.
6. Fill puffs.
Icing
1. Melt butter and Baker's chocolate in mircowave.
2. In a bowl, add 1 cup confectioners' sugar and 2 tablespoons of boiling water. Mix well
2. Add chocolate\butter mixture and beat (with electric beater until right consistancy (e.g. tempering) Stop beating when chocolate appears smooth and shiny.
3. Pour over top of puffs and set aside.
