Slow cooked on the charcoal grill

1. Prepare dry rub: Mix all dry ingredients (paprika to cayenne).
2. Remove skin from roast if it is a fresh ham or picnic roast. Pat dry with paper towels, then massage in dry rub. Wrap in plastic wrap and refrigerate for at least 3 hrs and up to 3 days. (Optional: if time is tight, cut into top and bottom of meat to increase surface area, massage rub into the slits, and let sit covered at room temperature for 1 hr.)
3. If chilled, remove roast from refrigerator, unwrap, and let sit at room temperature for at least 1 hr. Soak wood chips in water for at least 15 min to prepare for grill. Wrap in heavy duty aluminum foil, or double-wrap in regular foil. Make sure the chips to not poke holes in the bottom, but poke holes or cut slits in the top of the packet.
4. Start coals and bank hot coals on one side of the grill. Place wood chip packets on coals or on grill grate.
5. Set roast in disposable pan, place on side of grill opposite coals. Cook for 3 hrs. Every 30 min, check coals and add additional charcoal as necessary to keep hot. Replace or add additional wood chip packs during later phases of cooking.
6. Heat oven to 325. Cover or wrap disposable pan with roast in foil sufficiently to seal. Cook for 2 hrs (until fork-tender).
7. Slide fool-wrapped pan into brown paper bag, and crimp end shut to seal. Let rest for up to 1 hr.
8. Transfer to carving board, unwrap, and shred meat with forks and/or fingers. Place into bowl for serving or toss with barbecue sauce. Serve with remaining sauce separately.
