How to use roaster in BGE
Brine or dry chicken as preferred. Rinse brined bird and pat dry.
Heat EGG to 300-325 degrees F with plate setter, legs up.
Sprinkle bird cavity with dry rub. Place chicken on Norpro roaster and sprinkle dry rub onto skin.
Put catch pan onto plate setter and place base of roaster in catch pan. Add wine, stock or water to base of roaster to keep drippings from burning. (Catch pan will help contain drippings if base of roaster is too full.)
Roast at 300-325 degrees F until internal temperature reaches 150-155 degrees F (rotate roaster during cooking for even cooking).
Open upper and lower dampers and allow temperature EGG temperature to climb to about 450 degrees F. Remove bird when internal temperature reaches 165 degrees F.
Remove roaster with chicken and pour drippings into fat separator.
Remove bird from roaster and allow to stand for 15 minutes. Make gravy from drippings.
Keep bird low in EGG as upper part of bird will cook quickest, use aluminum foil tend as needed.
