Suggest a better descriptionHand method. Cut butter, into four small pieces. Combine wit flour and salt in a large bowl. Blend butter into flour using a pastry cutter, or by drawing tow knives through the flour in opposite directions so the flour and butter or lard are caught between the blades. When the mixture develops and even mealy consistency, dribble in the cold water a tablespoon at a time. and continue to mix. Form into a ball and refrigerate for 30 minutes.
Rolling the dough: This is the tricky part. Lightly flour the work surface, and rub a little flour over rolling oin. Place the dough in the middle of the surface. Working from the center of the dough, roll the dough out gently away fro you then toward you. Rotate the dough a quarter turn, then repeat. Try to keep the dough as round as possible, pressing the edges together as necessary to keep them smooth. Continue rolling out the dough, flouring the rolling pin as necessary.
