Basic Pizza Crust

In a small bowl, make the sponge by combining the first three ingredients. With a wooden spoon, stir to mix well; cover bowl with a towel and allow to sit 25-30 minutes. To this, add 1/2 cup warm water, milk, olive oil, salt and flour. Mix thoroughly until a ball of dough forms. On a floured surface, knead the dough 10-15 minutes, adding more flour as needed. Place dough in an oiled bowl. Cover and place bowl in a warm place. Let dough rise until double in size, about 2 hours. Punch dough down. Allow dough to rise again, about 45 minutes to 1 hour. Dough is now ready to shape, top and bake. If desired, sprinkle cornmeal on baking pan before shaping pizza dough.
Makes 1 large or 2 small pizza crusts.
