1) Allow the brisket to come to room temperature for 30 minutes.
2) Start the smoker and set to 300 degrees.
2) Combine the salt, sugar, shallots, garlic powder, smoked paprika and cayenne in a small bowl to make a dry rub. Massage the rub into all side of the meat, being sure to use it all. Lay the brisket in a foil pan.
3) Put brisket into the smoker and close the door. Cook until the internal temperature reaches 200 degrees. Put the beef broth in a spray bottle. When the water is refilled in the bottom of the smoker (each hour), take a minute and spritz the meat with the beef broth.
4) Let the meat rest for 5-10 minutes, then slice the brisket into thin slices across the grain.
