Juicy meatballs with a cheesy mozzarella sauce - how can food this delicious be good for you? Remember, healthy food can taste great too. Make this for the whole family and they will love you. This is a reduced-carb meal, though, so don't try to sneak in pasta or garlic bread
Melt the coconut oil in a large frying pan over a medium to high heat and roll in the meatballs until they have browned all over.
Meanwhile, put the onion, olives, garlic, red pepper, Parmesan, and tomatoes into a food processor and blitz until pretty much smooth.
When the meatballs are brown, tip the tomato mix into the pan and bring up to the boil. Simmer for 8-10 minutes, or until you are happy the meatballs are cooked through, then chuck in the spinach and gently stir it through the sauce until the leaves have wilted.
Finally rip up the mozzarella and dot it about in the sauce. Give the whole lot 1 minute with the lid on and then spoon it triumphantly into a bowl.
Finish by scattering with pine nuts and chopped basil.
