Suggest a better descriptionSlice semi-frozen meat, trimmed of fat, WITH THE GRAIN, into 1/8 inch slices. Marinate overnight in a shallow glass dish. Lay strips of marnated meat in a single layer on oven racks with cookie sheets underneath (or put foil on entire bottom of oven) to catch drips. With oven door open a crack, use a towel in the door it helps if your oven doesn't go down that low, roast at lowest temperature 125 degrees for 8 - 12 hours. NOTE: Pieces must not overlap in oven.
This makes an amazing duck jerky. Wild duck if you are a hunter.
