Beef stew with bacon, rich
Preheat oven to 350
Cook bacon in Dutch oven until crisp, remove and drain
Save 2 tablespoons or more of the fat in the bottom
Season the beef generously with salt and pepper
Add half the meat, cook for 4-5 mins on each side or until deep brown
Add remaining beef and cook the same.
Deglaze the pot with balsamic vinegar or Burgundy Wine
Place onion in the pot and season to taste with salt and pepper, cook until tender
Return meat
Add flour and tomato paste, cook for 1 minute, stirring to coat the meat
Add thyme and beef broth
Cover and place in oven for 2 hours
After 2 hours, add carrots, potatoes and bacon
Bake for an additional hour
