Green beans cooked with beef is a variation on the traditional recipe using lamb. The sliced red pepper used here makes this dish colourful as well as delicious.
1. Blanch the beans in boiling water for 3-4 minutes, then rinse under cold running water, drain and set aside.
2. Heat the oil in a large heavy-based saucepan and gently fry the onion until golden brown.
3. Mix together the ginger pulp, garlic pulp, chilli powder, salt, turmeric and chopped tomatoes. Spoon the mixture into the onion and stir fry for 5-7 minutes.
4. Add the beef and stir-fry for a further 3 minutes. Pour in the water, bring to the boil and lower the heat. Cover the pan and cook for 45-60 minutes until most of the water has evaporated and the meat is tender.
5. Add the green beans and mix everything together well.
6. Finally, add the red pepper, fresh coriander and green chillies and cook , stirring, for a further 7-10 minutes, making sure the beans are tender before serving.
7. Serve the beef hot, accompanied by chappatis or couscous.
