This is a light batter that doesn't get in the way of the fish. Taste the fish, not the batter.
Pour flour in a bowl and drizzle in a little peanut oil. Whisk flour and oil together and start adding beer. This will be a lumpy mixture. You really have to whisk alot. Get after it. You may need to add more beer. When you are done mixing this together, it should have the consistancy of latex paint with no lumps. Set aside to rest at least a half an hour. While it is resting, heat oil to approximately 350 degrees. Dip fish in batter and carefully place in oil. Fry till golden, brown and delicious. Maybe 4-5 minutes.
