Smooth cold bell pepper puree, served in a 2oz glass
1. Heat a small saut? pan on medium heat
2. Add olive oil to hot pan
3. Add garlic and saut? for 1 minute
4. Add onion and saut? for 2 additional minutes
5. Reduce heat to low
6. Add bell peppers and wine
7. Season with salt and pepper
8. Cook until peppers are soft, 10-12 minutes. If wine reduces to less than 20% add an additional 4 oz
9. Puree mixture with stick blender or in blender/food processer
10. Cool and serve
