1) Heat a large nonstick skillet over medium heat; cook bacon, turning occasionally until crisp, about 5 minutes. Alternatively, bacon can be cooked in a heated oven according to package directions. Drain slices on paper towels.
2) Toast bread.
3) Mix together mayonnaise, scallions, water, salt and pepper in a small bowl.
4) Lay 4 slices of toast on a work surface. Spread 1 tablespoon of mayonnaise on each. Layer with 1/2 cup arugula and equal portions of avocado, bacon, and tomato. Top with remaining pieces of toast. Serve immediately.
Yields one sandwich per serving.
