Use any berries
Work the shortening with a spoon until fluffy & creamy, Add sugar gradually while continuing to work with spoon until light. Add eggs and beat til light & fluffy. Sift (it's an old recipe)...Measure out flour, baking powder & salt & add to shortening mix alternately with the milk. Fold in the berries which have floured with the 3 T. flour. Turn into greased or oiled & floured 1 1/2 qt pudding mold & steam on top of the range for 1 hour. Serve with hard sauce. Serves 6
Hard Sauce:
1/3 C. butter or margarine
1 C. sugar
1 t. vanilla
pinch salt
To steam this pudding, put a rack into a big pot (6 qt or more) and put your pudding mold (or a covered casserole dish) on the rack. Put water in pot up to rack, put in the dish, boil the water to steam. Put cover on big pot. Add more boiling water as needed while pudding is cooking; and keep the water boiling (not hard boil) for the hour. Depending upon the dish, you may have to cook it up to 15-20 minutes more until center is done. Check with toothpick.
