Frying in peanut oil makes a difference.
Combine chicken with soy sauce and rice wine.
Combine green onions, garlic and ginger.
Combine soy sauce, sugar, rice vinegar and sesame oil.
Heat wok or skillet and add peanut oil. Dust chicken with cornstarch and fry for 5 minutes until golden brown. Drain on paper towels.
Drain oil and reheat wok. Add green onion, garlic and ginger and stir fry 20 seconds. Pour in sauce ingredients and cook another 20 seconds. Serve with chicken
NOTES : Can use equal parts cornstarch, flour and sesame seeds in place of plain cornstarch. OR Thread marinated chicken on skewers, sprinkle with sesame seeds and broil 3" from heat for 5 minutes per side.
