A really tasty dish, and not too spicy.
1. Cut any fat off the meat and cut into cubes. Heat most of the oil or ghee and fry meat for 5-10 minutes.
2. Pound in a mortar and pestle, or blend or liqudise the onions, garlic, tomatoes and vinegar.
3. Put this mixtyre in a separate pan with the remaining ghee, add spices, and stir-fry for 5 minutes.
4. Combine with meat, coconut and fried blend. Simmer until meat is tender. It should be quite dry with little gravy, but stir frequently, adding a little water if it sticks. Salt to taste.
Alternatively, casserole in oven at 375F (190C) Gas 5 for about 45 minutes - no stirring needed.
Almost like the orriganal from an Indian Restuarant. Very tasty.
