Suggest a better descriptionFully cook bacon in skillet on medium heat, remove and drain, then crumble. Set aside. Add onion and cook until they start to soften, about 2 minutes, then add bell pepper and optional jalapeño. Cook another two minutes then add garlic, cook an additional minute. Add tomato, black beans, corn and black olives. Mix well. Add pepper, chili powder, cumin, crumbled bacon and optional cayenne. Mix well, cover, reduce heat to low and simmer about 10 minutes until melded. Serve over brown rice or quinoa, and top with lime juice, avocado, cilantro, and optional hot sauce.
