This is the blue cheese dressing for Del Frisco's famous Wedge Salad - from Executive Chef Elvis Inniss
Crumble Blue Cheese and spread cheese on a sheet tray 2 hours prior to beginning process to allow oxidation and blooming. Blend all ingredients but salt and pepper with a hand blender until cheese is 1/8 inch in size. Add salt and pepper to taste, adjusting as necessary. Allow setting for 24 hours prior to serving.
