Suggest a better description1. Soak rice for 8 hours. Rinse and strain.
2. Cook rice using the absorption method. One part rice, two parts water, bring to the boil and then reduce to simmer, until all of the water has been absorbed and the rice is cooked. Once cooked, strain and run hot water through it.
3. In a bowl, combine rice, corn, peas, capsicum and brown onion.
4. Spoon mixture into the centre of a bok choy leaf and wrap like a parcel. Repeat for all 12 leaves.
5. Place parcels in a baking dish with the smooth side up and the folded sides tucked underneath. Fill the dish to make the parcels snug.
6. Drizzle a generous amount of honey and lemon juice over the parcels and the bottom of the dish.
7. Bake for 30 minutes in a low to moderate oven (160'C to 180'C).
8. Serve using a spatula.
