Trim the chicken thighs, rinse and pat dry. Combine the mayo, mustard and melted butter in one bowl, place some of the stuffing in another bowl. Spread each chicken thigh with mayo mixture, and press both sides into stuffing. Add additional stuffing into bowl as you go. Place chicken on plain cookie sheet or shallow baking dish.
Bake covered with aluminum foil for 30 minutes, and 10-15 additional minutes uncovered.
