Irish Whisky Bread Pudding (Yankee Magazine)
1) Preheat oven to 350 degrees.
2) Soak sultanas in hot water for 10 minutes. Drain.
3) Butter the bread.
4) Remove crusts and cut into triangles. Arrange in a greased deep dish (6x6x2-inch casserole dish).
5) In a saucepan, bring milk, cream, vanilla bean, and sugar to just below a boil.
6) Remove the vanilla bean.
7) Add milk mixture to the eggs.
8) Through a strainer, pour the egg and milk mixture onto the bread. Leave to soak.
9) Cover with aluminum foil and cook in a water bath in the preheated oven for approximately 55 minutes.
10) Remove foil and bake for 5 minutes to allow top to crisp.
WHISKEY SAUCE:
1) Boil milk, remove from heat.
2) In a separate saucepan, mix sugar and egg yolks.
3)Add mixture to milk and return to heat.
4) Cook gently over low heat, stirring constantly, until sauce thickens slightly.
5) Add whiskey
