Dissolve yeast in luke warm water (stir). Add sugar, butter and half of the flour. Beat until very smooth (important). Add salt. Add flour until you can not stir anymore. Put it out and knead until smooth and elastic, adding rest of flour as needed. Knead for approximately 10 minutes. Let it raise in greased bowl, about 1 1/2 hours.
Shape and put in buttered pans (if making loaves and dinner rolls) and let raise again for 1 hour.
Bake bread at 375 degrees for 45 to 50 minutes. Rolls bake at 350 degrees for 20 to 30 minutes. Once loaves or rolls come out of the oven brush with melted butter and let cool.
For cinnamon rolls: Melt enough butter to cover bottom of 9x13 pan. Sprinkle desired amount of brown sugar over butter. Use dough from 2 loaves of bread and roll into a rectangle on lightly floured surface. Spread with melted butter, sprinkle with cinnamon sugar, nuts (optional) and raisins (optional). Roll up like jelly roll. Cut into 1 1/2" slices. Put cut side down in prepared pan. Let raise 20 to 30 minutes.
Bake at 350 degrees for 30 to 35 minutes. Turn put of pan immediately to let caramel drip over rolls.
