Suggest a better descriptionreconstitute onion in water, or fine dice fresh onion
cut or drain and dry tomato in paper towel to remove excess water
mince green chili pepper. if using canned tomatoes with diced chilis, skip this step
heat a skillet to medium, and add 1T oil
fry up tomatoes and onions with a 3-4 grinds of salt, stirring occasionally
add sausage and chili
break up sausage into small pieces
fry until sausage is no longer pink, and slightly browned on the outside
remove mixture and loose cover to keep warm but not steam it
Scramble eggs in a nonstick pan on medium with 1/2T butter and 3 twists of salt from a salt shaker. Cook until whites are done through, but not until mixture is dry. Remove and cut into small pieces, about 3/8" cubes.
turn head to medium low.
heat up burrito in a clean pan with cheese placed in center until cheese starts to melt around edges. use a fine water sprayer to keep burrito from drying out
add mixture of egg and tomato/onion/sausage mix, about 50/50 in center of burrito on top of melted cheese. Volume is about 2-3T. Don't overfill.
fold burrito in half, then pull mixture together by pulling the top half toward the center. fold outer 1-2" of left and right sides in, then roll up. Cut in half on a bias and serve hot. If not served immediately, keep in a pan in a warm oven at 160F until the other burritos are ready.
