Pre-heat oven to 350
Dice 12-15 tomatoes, 15 slices soppressata, and 2 shallots. About equal proportions of each.
Add butter and oil to a sauce pan.
Add tomatoes, soppressata, and shallots.
Saute to bring out flavors.
Add salt and pepper.
Add 1 clove garlic.
When fragrant, remove from heat.
In a large mixing bowl, mix 6 eggs.
Add 1 cup milk
Add salt and pepper
Add a couple shakes of red pepper flakes
Add 1/2 lb ball of mozzarella, broken up
Add 1 pile of diced fresh basil
Add 1 lb refrigerator biscuits, diced into six pieces each
Mix all together in the bowl
Once the saute ingredients cool, add to the bowl and mix.
Pour mixture into a baking dish that is coated in butter (to prevent sticking)
Add 10-15 dollops of pesto, push into the mixture
Bake for 35-40 minutes.
