We love naan. We love breakfast. And we love pizzas. So why WOULDN'T we make delicious breakfast pizzas using fresh, homemade naan. No, you don't need a tandoor (though if you HAVE one, flex) but you will need a healthy appetite for something different for breakfast, or any meal!

To make homemade naan:
1. Grease a large mixing bowl with 2 tablespoons of olive oil and set aside.
2. Combine water, active dry yeast, and sugar in another large mixing bowl. Let sit for about 10 minutes or until the water looks foamy.
3. Add the yogurt, salt, and flour to the yeast mixture. Stir until a dough forms and begins to pull away from the sides of the bowl.
4. Dust a clean work surface with flour. Turn out the dough and knead until soft and smooth, about 5 minutes.
5. Shape the dough into a ball and place it in the greased mixing bowl. Cover the bowl with a kitchen towel and set it somewhere warm to rise. Let rise for 1 to 2 hours. The dough should double in size.
6. Again, turn the dough out onto a floured work surface. Punch down the dough and reshape into a circle. Cut or pinch the dough into 8 equal-sized pieces. Use a rolling pin to roll each piece of dough about ΒΌ-inch thick. You can roll the dough into rounds or irregular ovals.
7. Heat a lightly greased cast iron skillet set over medium-high heat. Once the skillet is hot, add one piece of naan and cook until it begins to bubble about 1 minute. Flip the naan and cook the other side until golden, about 30 seconds. Remove cooked naan from the skillet and repeat until all the naan has been cooked.
To make naan pizzas:
8. Preheat the oven to 425 degrees Fahrenheit. Arrange naan on parchment-lined baking sheets.
9. In a small bowl, mix together the olive oil, minced garlic, and dried herbs. Use a silicone brush or spoon to brush the oil mixture on top of the naan.
10. Spread each piece of naan with approximately 2 tablespoons of marinara or pesto sauce and 2 tablespoons of ricotta cheese.
11. Crack one egg into a small bowl. Carefully pour egg on top of one naan pizza. Repeat with remaining eggs. Sprinkle each egg with 1 tablespoon of shredded parmesan or mozzarella.
12. Bake for 10 to 12 minutes or until the whites of the eggs are set. Sprinkle the naan pizza with fresh chopped basil or parsley, slice, and serve.
