Suggest a better descriptionPeel and cut potatoes into 1 inch cubes. Place potatoes in a large pot and cover with enough water to submerge. Add salt and cover. Bring to a boil over high heat. Uncover and reduce heat to low to maintain a gentle simmer. Cook until potatoes are easily pierced with a knife but not falling apart- 12-14 minutes. Meanwhile line a baking sheet with paper towels.
Drain potatoes and then transfer to a single layer on the paper towel. Pat dry with more towels and let cool for 10 minutes. Meanwhile mince garlic. Microwave 2 tablespoons of butter until melted. Add garlic, parsley and pepper and another heavy 1/4 teaspoon of salt. Stir to combine and set aside.
Heat olive oil in a 10 inch skillet over medium high heat and heat until shimmering. Add potatoes and cook, stirring and flipping them often, until golden brown and crispy on all sides, 10-12 minutes total. Transfer the potatoes in the bowl of garlic butter and toss to coat. Transfer to sa serving bowl and garnish with Parmesan cheese.
