This is a slightly modified version of the famous and well liked Libby's Pumpkin Pie recipe that I am trying for the first time. This makes 2 pies.
-Preheat the oven to 425 degrees F.
-Lay crusts out in pie plates.
-Empty pumpkin "paste" into large bowl for electric mixer, set aside.
-Beat the eggs in a small bowl for the mixer.
-Gradually add in the spice, salt, sugar, and finally the half-and-half. Set aside for the moment.
-Place the large bowl back in the mixer and begin to mix the pumpkin a bit on low speed. gradually begin to add the contents of the small mixing bowl to the pumpkin while the mixer is still on.
-Once well mixed pour the batter into the two pie plates/crusts.
-Place in oven at 425 degrees F for 15 minutes.
-Reduce heat to 350 degrees F and continue baking about 40-55 minutes until a knife inserted in the center comes out clean.
-Cool 2 hours on rack.
-Serve immediately or refrigerate.
