Whip egg whites to a froth with a pinch of salt, then until peaks form. Slowly mix in gelatin, and vanilla being sure that it is well mixed. Whip cream and fold into gelatin mixture. Butter a springform pan. Press most of the coconut onto sides and bottom of pan. Pour in whipped cream mixture. Top with rest of coconut. Chill for 4-5 hours until completely set.
