This is not your everyday stuffing and is quite different from the normal recipes you see. This stuffing has a lot of variety and ingredients. This is another recipe that has been used for many years and holidays in my family and one that we look forward to each and every year.
Brown the Pork Sausage and add sage seasoning if not already flavored. Do not drain the sausage drippings when brown. Add the 2 tbsp Butter so that it melts in with the drippings.
While sausage is browning, Dice the Apple, Celery Stalks, and Mushrooms.
Using your hands, gently mix all ingredients into a large bowl. Add one egg at a time until thoroughly mixed add more eggs if you desire more moistness.
It is very important to use the sausage drippings and mushroom water before adding more eggs. The water will evaporate but leave behind the flavor in the Cretans.
This stuffing may be used inside of a Turkey or just place in a Bread Pan. If in a bread pan then pre-heat oven to 350 cover with aluminum foil and cook for about 30 minutes. Do not over cook as it will dry out the stuffing. Using the aluminum foil will help keep the moisture in the stuffing.
