Suggest a better descriptionWhisk together all-purpose flour, whole-wheat flour, wheat germ, sugar, salt, baking powder, and baking soda in a bowl. Combine buttermilk and 2 tablespoons of the butter. Add wet ingredients to dry ingredients and stir with rubber spatula. Don't overmix. Turn out dough onto lightly floured counter and knead about 8 turns until dough forms a ball. Pat into 7-inch round and transfer to cookie sheet. With large serrated knife, cut a cross across the top. Bake 45 to 50 minutes, rotating cookie sheet halfway through the baking. Remove from oven and brush with remaining tablespoon of butter. Transfer to wire rack and let cool for an hour before serving.
