Preheat oven to 350 degrees
Combine 1/2 top of the erythritol, 1/2 cup of the melted oil, the eggs, and vanilla in a large mixing bowl.
In a separate bowl place the almond flour, 1/4 cup of the cocoa powder and the baking powder and whisk with a fork.
Add the dry mixture to the wet mixture and mix until smooth
Transfer the batter to the lined pan and smooth with the back of the spoon bake for 20 to 25 minutes into a toothpick inserted in the middle comes out clean. Allow to cool for 30 minutes.
Meanwhile prepare the frosting: please the remaining 1/4 cup of erythritol, 3 tablespoons of melted oil, and 2 tablespoons of cocoa powder in a small bowl. Whisk to come by.
If you’re serving the cake right away, as soon as it’s cool Cut into eight equal pieces. Please on plates, and drizzle with the frosting. If you’re serving it later, cover the entire cake with the frosting while it’s still in the pan and sit in the fridge for at least 20 minutes before serving.
Store in an airtight container in the fridge for up to five days are in the freezer for up to one month. To thaw it set it on the counter for 20 to 30 minutes before serving.
