Curries are not really my specialty but this is basic and quite tasty
1. Par boil potatoes and carrots in advance and set aside
2. Heat oil frying pan on high heat,
3. Add garlic and cook for bout 30 seconds drop
4. Add curry paste & chilli powder, continue cooking and stirring for 30 seconds
5. Add coconut milk & bring to simmer
6. Stir in the fish sauce & chicken
7. Turn the heat down to a light simmer cover, cook 8 minutes stirring occasionally
8. Add veggies and cook for 5min until all ingredients are cooked through
9. Stir in the basil leaves, lime juice & zest then serve
Serve with roti, rice or naan
