This is a fantastic way to make burrito or taco filling. To make it spicy, add the Chorizo. If you wish to keep the heat down, leave out the Chorizo and add potatoes.
1. Sprinkle salt on chuck roast and place in crock pot. Cook on low for about 6 - 8 hours, or until beef starts falling apart.
2. When meat is done, remove from crockpot and put in a 13 X 9 pan. While the meat is cooling, cook chorizo. Add cooked and cubed potatoes, onions, and cilantro. Mix together and take off heat.
3. Take two forks and shred meat in pan. Then add Chorizo mixture. Mix everything together.
4. Heat flour or corn tortillas and fill with meat mixture.
This is especially good if you want to make taquitos. It's nice to have on hand for that "I don't feel like cooking" night.
