Use hands to shaped cheese into 1.5 to 2 inch balls. wrap balls in cheesecloth or plastic wrap. Chill 4 to 24 hours. Carefully remove cheesecloth and let stand 15 min before serving with cracker's. makes 1 1/4 cups.
