Butternut Squash-Clean Eating
Prior: Saute' onions in olive oil, Saute' baby spinach in olive oil with garlic, Boil/blanch asparagus
Pour asparagus, onions on board and chop-up to bite size pieces.
Filling:
In mixing bowl add ricotta, spinach, asparagus, onions, egg or just egg white, and mix together.
Mix together
Can add meat to the filling if you like.
Sauce
In saucepan add 3 tablespoons organic butter and allow to melt.
Then whisk in 2 tablespoons of brown rice flour and 1/4 cup milk.
Add Parmesan/Reggiano cheese and continue whisking until cheese is melted.
Also add pinch of black pepper, dry mustard, and nutmeg
Butter baking dish
Layer-Butternut squash (cut in slices like noodles 1/2 inch thick), Ricotta Cheese Mixture
REPEAT as many times as you can/Top with squash
Pour Sauce over top and then sprinkle remaining Parmesan Cheese
Cover with aluminum foil and bake at 400 degrees for 30-45 minutes
