Suggest a better descriptionHeat oven to 425. Toss the squash and 2T of oil with salt & pepper. Lay out squash in a single layer on a cookie sheet. Roast in the oven for 25 minutes.
Heat 2T of oil in a large skillet. Heat the garlic, peppers and onions until warmed through. Add the squash and meat if using. Sauté until browned slightly.
Remove and serve with two eggs over easy. Add salt & pepper to taste.
