Trim the stalks of the onions, removing all but 1cm of the green top. Peel away the first 3 layers of the tough skin and remove as much root as possible while keeping he onion intact. Seal the trimmed onions in a sous-vide bag at 15mbar and microwave at ull power in 15-second bursts, checking each ime to see when the onion feels tender but lot overcooked ? about 60 seconds in total.
Chill in an ice bath and refrigerate until needed.
