Cabbage leaves stuffed with seasoned ground beef and rice mix
Bring pot of water to boil, add 2 tbsp salt (pot needs to be large enough for one cabbage head to fit in and submerge in boiling water). Place head of cabbage in boiling water, after 30 seconds start removing one outer leaf at a time and stack on a cookie sheet until you've removed almost all leaves (a core will remain). Repeat for second head of cabbage. Set aside or place in fridge until needed.
Place ground beef in large mixing bowl, pull apart and spread out in bowl. Add salt, pepper, garlic, thyme, onion and rice...mix together gently.
To stuff cabbage leaves, layout one cabbage leaf then place about a golf balls sized piece of ground beef mixture on the stem end. Roll stem over meat then fold in sides and finish rolling. Adjust the amount of meat according to the size of the cabbage leaves. I also separate the smaller cabbage rolls from the larger to place in different parts of the pot for cooking.
In a 6-8qt pot with a thick bottom, arrange the cabbage rolls as follows:
Place a few leftover cabbage leaves on the bottom of the pot to form a layer to protect cabbage rolls, if not leftover leaves you can use pieces of the cabbage core. Start with the largest cabbage rolls, lay in the bottom of the pot to form the first layer. Take ~2 tomatoes from can and crush over the cabbage roll layer then lightly sprinkle a bit of salt and pepper and dried oregano over the layer. Repeat until all cabbage rolls are in the pot, crush any remaining tomatoes and pour out tomato sauce from can over cabbage rolls. Washout tomato can with water and pour into pot, add small can of tomato sauce then fill with water until liquid is at top of cabbage rolls.
Cover pot and on medium heat, bring pot to a simmer. Cook until cabbage is cooked and rice inside of roll is cooked, about 2 hours on simmer.
